The business of hotel operations involves both the generation of revenues, typically from several areas such as the rental of guest rooms, the sale of food and beverage products, provision of ancillary services (in-room movies, telephone, etc.). In addition, it also involves the incurring of numerous related expenses such as payroll and the cost of products and supplies as well as costs involved with the building itself.

On-going control of all expenses is critical to the financial well-being of a hotel. However, the process of cost-control involves numerous elements which must all be in active use if profit levels are to be attained.

Ashler can undertake detailed reviews of hotel operations. These reviews involve both the revenue performance, such as occupancy and ADR, and the hotel’s overall financial performance. Here, we will evaluate the cost ratios of the hotel and determine where additional profits might be generated. We will also review the operational methods and prepare a plan to enable the hotel to reduce its costs while retaining, even improving, quality standards. We will also look at staff scheduling, productivity, purchasing, receiving and storage methods, utility metering and a variety of other areas where cost savings can be made.

The result is to better ‘engineer’ the operation of the hotel to increase profit levels.
